These wines are made at three distinctively different estates in the Bandol and Cotes de Provence appellations: Chateau Romassan

apple and pear characters are balanced by fresh acidity

crushed and macerated for only 4-5 days

layer by layer to form a rich full-bodied wine with chalky

neutral barrel—if any—oak

little or no sulfur or other interventions that hide the fruit or the vintage that spawned it

while the fermentation goes on for a leisurely month or two
