由於歷史悠久，已退休的前任莊主Paul Bara，曾經品嚐過倖免於世界大戰的酒窖中陳年老香檳，深刻體會到保存基酒的重要性，因此基酒的調配在酒莊是極為關鍵的風格決定因素。採用有機的方式，將葡萄園分為33區進行種植，平均樹齡約為35~40歲。手工採收後，使用舊式的木式垂直榨汁機，為了呈現純淨的風味，酒莊僅使用第一次壓榨的葡萄汁tête de cuvée進行釀造。之後根據採收區域個別分開釀造。壓榨的一番搾葡萄汁導入陶瓷與不銹鋼槽進行發酵，以便保留純淨的果味與礦物感。不進行乳酸發酵，保持俐落的酸度與新鮮的果味。
